I am a genuine oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of these yet? (? You'll find all my oatmeal cookie recipes directly there!) They're a few of the most popular recipes in my site because they taste very sweet and cozy, exactly like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!

That means you'll begin with whole wheat germ (or fermented, if you prefer) and immediate oats (such as these... or those for a gluten free edition!) . Immediate oats are smaller and thinner than conventional rolled oats, also you can see them in canisters right alongside those traditional oats in the grocery store.

I probably sound like a broken record by now... But because I ? you and want your cookies to flip out perfectly plump and soft, I am reminding you again... Quantify your flour and oats properly, applying this technique or even a kitchen scale! (? That's the one I have and adore. It just cost $20!) Too much of either ingredient is likely to make your biscuits taste cakey or dry, instead of chewy. This is especially true of the oats--they behave like little sponges and consume lots of moisture from your cookie dough!

Healthy Banana Oatmeal Raisin Cookies

Yields: 15 cookies

The recognizable cozy spices and plump blueberries make them even more irresistible. They'll keep for a minumum of one week if kept in an airtight container in the refrigerator--if they last that long!


1 cup (100g) instant oats (fermented if needed and measured like this)

3/4 cup (90g) whole wheat or fermented * flour (measured like this)

1 1/2 tsp baking powder



1/4 tsp salt

2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly



1 teaspoon vanilla extract



1/4 cup (40g) raisins

In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. Stir in the maple syrup. Add in the flour mixture, stirring only until incorporated.



Using a spoon and spatula, dip the cookie dough into 15 curved scoops on the prepared sheet, and flatten to the desired depth and width using BANANA OATMEAL COOKIES recipe  Epicurious.com a spatula. Bake at 325°F for 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.

Notes: It's extremely important to measure both the wheat and oats properly utilizing this method or a kitchen scale. (? That's exactly the one I own and adore!) Too much of either will dry out of the cookies and render them cakey instead of chewy.

Instant oats are also referred to as quick-cooking or moment oats. They are available in massive canisters, just like old-fashioned oats. They are not the ones at the tiny flavored loaf of bread. In case your pancakes are elderly, drier, and not so plump or succulent... Add them to a microwave-safe bowl, and pour water on top until they're totally covered.
